Flavor in Layers
Cajun cooking developed in Louisiana and is known for building bold flavor with aromatics, peppers, herbs and spices rather than relying on heat alone.
The cuisine reflects Acadian, Southern and Louisiana influences. Familiar combinations often begin with onion, celery and bell pepper before adding herbs, spices and savory ingredients.
Preparation
Preparation
Premium sausage: pan-fry
- Add a small drizzle of olive oil to a heavy skillet.
- Add the sausages and cook for approximately 12 minutes, turning every minute or two, until browned on all sides.
- Before serving, verify that the sausages are piping hot, no pink remains and the internal temperature has reached 160°F.
Grill
- Create a hot side and a cooler side on the grill.
- Brown the sausages on the hot side for a few minutes, turning every minute or two. Move them if flames flare up.
- Move the browned sausages to the cooler side and continue cooking without burning.
- Before serving, verify that no pink remains and the internal temperature has reached 160°F. Use the same heat-zone method on a gas grill.

Cajun Sausage with Real Southern Heat
This is a pork sausage that knows what it's for. Salt, garlic and a spicy blend of seasonings run through every inch of the link, built to flavor a whole pot rather than just hold its own at a cookout. We stock it because Cajun sausage and Chesapeake seafood have always understood each other; the same table that holds steamed shrimp welcomes a smoky, spicy slice right beside them.
Oven or Skillet, Twenty Minutes Out
The no-fuss method is the oven: 400°F, sausage laid out on a foil-lined pan on the middle rack, 20 to 25 minutes until the inside reaches 165°F, with no turning required. If you'd rather build a crust, a heavy skillet with a small drizzle of olive oil browns it beautifully on the stovetop. Either way, slice it on the bias and it's ready for whatever's simmering.
Where It Earns Its Keep
Drop thick coins into a gumbo and the spice blooms through the whole pot. Stir it into bean soups, fold it into a skillet of rice and peppers, or pile slices onto a roll when the pot seems like too much ceremony. A single link stretches further than you'd expect once it starts seasoning everything around it; the garlic does as much of that work as the pepper, which is exactly why it gets along with seafood.
Filling Out a Frozen Order
Sausage ships frozen and rides comfortably in the same insulated cooler as the rest of a meat order. It pairs naturally with our local beef tenderloin filets if you're stocking the freezer in one delivery. For cooking inspiration once everything thaws, the recipes section of our blog covers the field from the grill to the gumbo pot.
