Tender by Anatomy
Beef tenderloin comes from a muscle along the spine that performs very little work, which is why it is naturally one of the most tender cuts of beef.
Because the tenderloin is not a heavily exercised muscle, it contains less connective tissue than many other cuts. Careful cooking and a short rest help preserve that naturally tender texture.
Preparation
Preparation
Beef tenderloin: grill
- For charcoal, place the meat directly over medium coals. For gas, preheat the grill and reduce the heat to medium.
- For a 1-inch cut, grill for 10 to 12 minutes for medium rare (145°F) or 12 to 15 minutes for medium (160°F), turning once halfway through.
- Transfer to a platter, cover with foil and rest for 5 minutes.
Skillet
- Choose a heavy skillet that holds the meat snugly in one layer, and pat the meat dry.
- Lightly coat the skillet with nonstick spray and preheat over medium-high heat until very hot.
- Add the meat without liquid or a lid, reduce the heat to medium and cook for 10 to 13 minutes, turning occasionally, to 145–160°F.
- Transfer to a platter, cover with foil and rest for 5 minutes.
Broil
- For cuts under 1½ in thick, position the broiler rack so the meat will be 3–4 in from the heat, then preheat the broiler.
- Place the tenderloin on the unheated rack of a broiler pan.
- For a 1-inch cut, broil for 12 to 14 minutes for medium rare (145°F) or 15 to 18 minutes for medium (160°F), turning once halfway through.
- Transfer to a platter, cover with foil and rest for 5 minutes.

Angus Beef Tenderloin from Your Seafood House
It might seem odd for a crab house to sell steak, until the first time you set a filet beside a crab cake and watch the table go quiet. We carry these Angus tenderloin filets for exactly that dinner: a lean, mild, tender cut that shares a plate with delicate seafood instead of shouting over it. It's the steak people save for milestones, yet it cooks quickly enough for an ordinary Friday.
On the Grill, by the Numbers
Tenderloin rewards restraint. Set the filets over medium coals on a charcoal grill, or preheat a gas grill and bring it down to medium, then cover and turn the meat once at the halfway mark. For a 1 in cut, figure 10 to 12 minutes for medium rare at 145°F, or 12 to 15 minutes for medium at 160°F. These filets run a touch thicker than that benchmark, so trust an instant-read thermometer over the clock and pull them the moment they hit temperature; carryover heat finishes the job while they rest. Cooking indoors instead? A hard sear in a heavy pan followed by a short finish in a hot oven builds a comparable crust.
The Rest of the Menu Writes Itself
Thaw a couple of filets in the refrigerator while the seafood steams, and dinner becomes an occasion without anyone leaving the house. A filet and a crab cake split the plate neatly, and the steaks you don't cook stay sealed in the freezer for the next celebration. When you're ready to move beyond salt and pepper, the recipes on our blog cover both halves of a surf-and-turf plate. Every shipment travels frozen, packed with dry ice in an insulated cooler.
