Grading and Sizing Maryland Blue Crabs
There is no universal industry standard for crab sizes. A crab sold as large by one supplier may be considered medium somewhere else. Harbour House Crabs sizes hard-shell crabs by measuring the top shell from point to point, giving customers a clear physical measurement instead of relying on a grade name alone.
Male Jimmy Size Guide
- Heavyweights: 7+ in
- Jumbos: 6½–7 in
- Large: 6–6½ in
- Medium: 5½–6 in
- #2 males: 5–5½ in
Point-to-point measurements make it easier to compare grades and understand exactly what should arrive in the box.
Preparation
Preparation
Maryland blue crabs: steaming or re-steaming
- Add approximately 2 in of water to a large pot and place a rack or steaming basket inside to keep the crabs out of the water.
- Bring the water to a boil and wait until steam is visible before adding the crabs.
- Sprinkle the crabs with crab seasoning to taste, then cover the pot with a lid.
- For live crabs, steam for 5 to 10 minutes after steam begins escaping from under the lid. The crabs are cooked when they turn orange.
- For already-steamed crabs, follow the same method for less time and use the steam-time chart below for the quantity being reheated.

The Large Jimmy: Maryland's Feast-Table Standard
If the Maryland crab feast has a default crab, this is it. The large male hits the sweet spot between size and abundance: big enough for real claw and body meat, small enough that the pile in the middle of the table stays tall all afternoon. When people picture a proper spread, they are usually picturing this grade.
Built for the Long Table
A feast is a marathon, not a sprint, and large jimmys keep the pace. Sturdy claws that reward a clean mallet strike, full bodies that give up their meat without a fight, and enough crabs per order that nobody is counting who took the last one. It is the grade we recommend when the guest list is long and the appetites are mixed.
When to Reach for a Jumbo Instead
That extra ½ ft matters more than it sounds. Our jumbo jimmy crabs deliver bigger lumps per crab; larges deliver more crabs per table. A fair rule: feeding a few devoted pickers, go jumbo; feeding a crowd, go large.
Cooked to Your Order, Shipped Cold
Nothing is steamed until you buy it. Choose a seasoned crust or plain shells, and your crabs leave the pot for a cold-packed insulated cooler, with dry ice included on two-day trips, so partial freezing in transit is expected rather than a problem. A brief steam at home brings them back to serving temperature.
Six Hundred Reviews Deep
Some of our longest-running customers live nowhere near the bay. A family in Louisville ordered a bushel for a reunion and got exactly the full, heavy crabs they hoped for; a Charlotte regular calls us every time the craving hits. For timing your own feast, our Maryland hard shell crab season guide covers the calendar month by month. The table is easy to set from there.

Frequently Asked Questions
How do you eat Maryland Blue Crabs?
Ask a Marylander how to eat crabs and you are sure to get a variety of answers. Step-by-step instructions are included with every crab order, and our how-to guide and videos walk you through cracking and picking like a pro.
Are your hardshell blue crabs frozen?
Our hard-shell crabs are steamed to order on the day they ship and packed cold for delivery. Dry ice used on some routes can partially or fully freeze crabs in transit without changing the product that was prepared.
How are blue crabs measured?
Maryland blue crabs are measured point to point across the shell. Our sizes range from #2 males at 5–5½ in up to 7+ in heavyweights.
Can I freeze my blue crabs after receiving?
We do not recommend freezing steamed hardshell crabs, freezing makes the meat tough and chewy. Instead, pick the crabs first and freeze just the crab meat.
How many large Maryland blue crabs should I order per person?
Plan on approximately 6 to 8 large crabs per adult when crabs are the main course. Appetites and side dishes vary, so consider ordering a little extra for a long crab feast or a group of experienced crab pickers.
Can I choose the seasoning for my steamed blue crabs?
Yes. Pre-steamed crabs can be prepared with Old Bay, Harbour House seasoning or no seasoning, depending on the options available when you place your order.
How should I store steamed blue crabs before eating them?
Refrigerate steamed crabs promptly and enjoy them within 2 to 3 days. When you are ready to serve them, reheat them gently with steam so the meat stays moist and tender.
