Why the Pieces Are So Large
Jumbo lump crab meat comes from the two large muscles that power a crab’s swimming fins. Because each crab has only two of these muscles, jumbo lump is especially prized.
Careful picking keeps these swimmer-fin muscles intact, producing the impressive whole pieces associated with jumbo lump. Their mild, sweet flavor makes them a centerpiece in premium Maryland crab cakes.
Preparation
Preparation

The 5+ oz Crab Cake That Built Our Reputation
Break one of these open and you can read the recipe at a glance: broad pieces of jumbo lump crab, barely interrupted. There's no shredded padding, no potato, no mystery; the bread crumb is there strictly to hold ranks, and it keeps a low profile. What's left is crab, front and center, the way a Maryland cake is supposed to be built.
Eight Minutes to Golden
The stovetop method is quick enough for a weeknight. Get a heavy skillet of oil hot, just shy of smoking, and give each cake three to four minutes per side, turning once. When both faces are deep golden, move the cakes to paper towels for a moment, then onto plates with tarragon tartar sauce and a wedge of lemon. Dinner, start to finish, in less time than it takes to set the table.
Two Hundred Sixty-Nine Opinions and Counting
This cake holds a 4.82 average across 269 reviews, and the recurring theme is comparison: customers measuring it against crab cakes they ate in Maryland years ago and finding it holds up. Others write in after dinner parties to report that their guests promptly became our customers. One reviewer called them the best they'd eaten in 56 years of living. We'll let the record speak for itself.
Scaling the Idea Up or Down
The same mixture rolls into 1½ oz jumbo lump crab cake bites when you need an appetizer instead of an entrée. And before you plan the plate, read our take on the five best sides to serve with crab cakes; a cake this rich wants simple company. Each one arrives frozen under dry ice, ready for the skillet whenever the occasion calls.
