Why Color Changes During Cooking
Shrimp are crustaceans with rigid exoskeletons, so they must molt as they grow. A newly formed shell is soft before it hardens.
Heat changes shell pigments and turns shrimp from translucent grey to pink. The flesh also becomes opaque and firm, providing a useful visual cue alongside the recommended cooking time.
Avoiding overcooking is important because shrimp continue firming quickly once they become opaque and pink, especially at jumbo sizes.
Preparation
Preparation
Raw shrimp: steaming
- Add 2 in of water to the bottom of a pot and bring it to a boil.
- Place a steaming basket in the pot and add the raw shrimp, keeping them out of the water.
- Sprinkle with Harbour House Crabs seafood seasoning and cover with a lid.
- Steam for approximately 4 to 5 minutes after steam begins escaping from under the lid. The shrimp are done when the flesh is opaque and pearly and the shells are pink.
- Serve with cocktail sauce. Steam times may vary.

½ lb of Raw Jumbo Gulf Shrimp, Your Pot, Your Rules
Ordering shrimp raw is the cook's choice. Nothing has been decided for you yet: not the seasoning, not the method, not how far to take them. These Gulf jumbos run big enough that a single shrimp makes a two-bite affair, and the ½ lb size, one you won't find anywhere else on our site, slips easily into an order alongside crabs, clams or a few crab cakes without committing you to 1 lb.
From Grey to Pink in About Five Minutes
The steamer treats them best. Put 2 in of water in a pot and bring it to a boil, then set the shrimp in a steam basket so they stay above the water line. Dust them with seafood seasoning, cover, and give them roughly four to five minutes after the steam starts pushing out from under the lid. The shells tell you when to stop: the moment they turn from translucent grey to pink, pull them. Timing shifts a little with every stove and pot, so watch the color, not the clock.
Where They Shine at the Table
Chilled with cocktail sauce, they make an easy opener while the crabs are still steaming. Tossed in a hot pan with butter and garlic, the same shrimp become dinner. And because they arrive uncooked, they take a marinade properly, something no pre-cooked shrimp ever really does.
