Growing Through Molting
Blue crabs usually live for three to four years and can molt as many as 25 times while growing. Their hard outer shell cannot expand, so it must be shed and replaced.
A blue crab grows by forming a larger, soft shell beneath its old one and then shedding the old shell. The new shell expands before it hardens, allowing the crab to increase in size.
Preparation
Preparation
Maryland blue crabs: steaming or re-steaming
- Add approximately 2 in of water to a large pot and place a rack or steaming basket inside to keep the crabs out of the water.
- Bring the water to a boil and wait until steam is visible before adding the crabs.
- Sprinkle the crabs with crab seasoning to taste, then cover the pot with a lid.
- For live crabs, steam for 5 to 10 minutes after steam begins escaping from under the lid. The crabs are cooked when they turn orange.
- For already-steamed crabs, follow the same method for less time and use the steam-time chart below for the quantity being reheated.

Jumbo Jimmy Crabs: 6½–7 in of Backfin
A jumbo changes the arithmetic of a crab feast. At 6½–7 in, each male carries heavy claws and broad chambers of backfin, which means you crack fewer shells and pull more meat with every round. These are the crabs you put in front of the serious eaters.
What Picking a Jumbo Feels Like
There is a particular satisfaction to a big jimmy: the knuckle-crack of a claw that actually fills your hand, lumps of backfin that lift out whole instead of in shreds. First-timers find jumbos forgiving, too: the chambers are large enough that the anatomy makes sense on the first try, and the payoff arrives fast enough to keep beginners hooked.
A Following That Goes Back a Decade
More than five hundred reviews sit behind this grade, and the pattern is repeat business: customers placing their second jumbo order within weeks of the first, and at least one who has been calling on us for close to ten years. The words that come up again and again are sweet, full, and seasoned right.
Fresh From the Steamer, Cold in the Box
Your jumbos are cooked when the order comes in, spiced or naked as you prefer, then packed in an insulated cooler with gel packs, with dry ice added on every two-day shipment. Some may arrive partly frozen; set them on a rack above 2 in of boiling water and give them five to ten minutes once the steam pushes out from under the lid.
Plenty of tables mix in a dozen large female crabs for their sweeter body meat alongside the big males. And because jumbos are a mid-summer-into-fall story on the bay, our guide to the Maryland hard shell crab season will help you time the order. After that, all that is left is the newspaper and the nutcracker.
