A Versatile Grade
Backfin is a blend of smaller pieces of lump and body meat, with no leg or claw meat. It works especially well in crab cakes, soups and dips.
Its combination of flavor, smaller pieces and softer texture makes backfin useful beyond crab cakes. It also blends easily into soups, dips, casseroles and other dishes where crab is distributed throughout.

Preparing Backfin Lump Crab Meat
Maryland backfin contains only blue crab meat. There are many different methods to prepare fresh Maryland crab meat, but using it in a crab cake is one of the most popular ways, and for a good reason.
- In a bowl, whisk together the butter, eggs, sour cream, parsley, lemon juice, Worcestershire sauce, paprika, salt, and cayenne, and gently stir in the crab meat and the bread crumbs.
- Form ½-cup measures of the mixture into twelve ¾-inch-thick cakes and transfer them as they are formed to a baking sheet sprinkled with half the cornmeal.
- Sprinkle the crab cakes with the remaining cornmeal and chill them, covered with plastic wrap, for at least 1 hour or overnight.
- In a large, heavy skillet, heat the oil over moderately high heat until it is hot but not smoking, and saute the crab cakes in batches, turning them once, for 3 to 4 minutes on each side, or until they are golden.
- Transfer to paper towels to drain; keep warm on a baking sheet in a 200°F oven.
- Serve with tartar sauce and lemon wedges.
This recipe makes about 12 crab cakes, which serves around six people.

Backfin Lump: The Crab Meat Maryland Cooks Grew Up On
Ask around Maryland about what belongs in a proper crab cake and plenty of cooks will answer backfin without a pause. This is the grade whole generations learned on: flaky, tender white meat from blue crabs, sweet and delicate in flavor but with enough body to bind a cake and survive the flip.
Choose Fresh or Pasteurized
We sell backfin two ways, and the difference is all about timing. Fresh meat ships straight from our Maryland site for cooking in the days ahead. The pasteurized version arrives in a sealed can with a much longer shelf life, which makes it the smart pick when the cooking date is still a moving target. Same crab either way; only the calendar changes.
A Crab Cake Method Worth Stealing
The recipe we point customers to builds its seasoned base first (butter, eggs, sour cream, parsley, lemon juice, Worcestershire, paprika, salt and cayenne) before the crab and bread crumbs are stirred in gently. Half-cup portions get shaped into cakes about three-quarters of 1 in thick, set on a cornmeal-dusted baking sheet, sprinkled with more cornmeal and chilled under plastic wrap before they ever meet the heat. That rest is the difference between cakes that hold and cakes that crumble. A shake of Old Bay over the finished plate never hurt anybody, either.
Where Backfin Sits in the Lineup
Backfin buyers have kept it at a five-star average across a dozen reviews, praising the delivery and packaging as often as the meat itself; one shopper pledged loyalty for good after we made a carrier's mistake right. Above backfin in the case sits Maryland jumbo lump, the grade reserved for whole-piece presentations, and our article on what the different crab meat types are for compares every grade side by side. Backfin ships frozen, packed with dry ice, and thaws into whatever you're making next.

Frequently Asked Questions
What are the months for fresh crab meat?
We typically stock fresh jumbo lump, claw and backfin crab meat from April through November. From December to March we offer pasteurized crab meat.
How much crab meat is in one crab?
Yield varies with the crab's species, size, weight, season and how carefully it is picked. For a recipe that needs a precise amount, use the packaged weight on a crab-meat product rather than estimating yield per whole crab.
How do I prepare your crabs and seafood?
Every order ships with preparation instructions, and our food prep guide, recipes and how-to videos cover steaming, re-steaming and cooking all of our crabs and seafood.
How are the orders packed for shipment?
Every order is sealed inside an insulated styrofoam cooler and placed in a sturdy box for extra protection. Depending on the products, destination, transit time and season, we use ice packs and/or dry ice, and we pack orders to withstand potential shipping delays.
How much is shipping?
Shipping options and cost are calculated at checkout for the product, destination and requested delivery date. Eligible perishable orders may offer overnight or 2-day service, and select packages include standard shipping in the listed price.
