Why the Pieces Are So Large
Jumbo lump crab meat comes from the two large muscles that power a crab’s swimming fins. Because each crab has only two of these muscles, jumbo lump is especially prized.
Careful picking keeps these swimmer-fin muscles intact, producing the impressive whole pieces associated with jumbo lump. Their mild, sweet flavor makes them a centerpiece in premium Maryland crab cakes.

Preparing Jumbo Lump Crab Meat
Maryland jumbo lump contains only blue crab meat; stir gently so the big lumps stay whole. There are many different methods to prepare fresh Maryland crab meat, but using it in a crab cake is one of the most popular ways, and for a good reason.
- In a bowl, whisk together the butter, eggs, sour cream, parsley, lemon juice, Worcestershire sauce, paprika, salt, and cayenne, and gently stir in the crab meat and the bread crumbs.
- Form ½-cup measures of the mixture into twelve ¾-inch-thick cakes and transfer them as they are formed to a baking sheet sprinkled with half the cornmeal.
- Sprinkle the crab cakes with the remaining cornmeal and chill them, covered with plastic wrap, for at least 1 hour or overnight.
- In a large, heavy skillet, heat the oil over moderately high heat until it is hot but not smoking, and saute the crab cakes in batches, turning them once, for 3 to 4 minutes on each side, or until they are golden.
- Transfer to paper towels to drain; keep warm on a baking sheet in a 200°F oven.
- Serve with tartar sauce and lemon wedges.
This recipe makes about 12 crab cakes, which serves around six people.

Maryland Jumbo Lump Crab Meat, Handled Gently
Jumbo lump is the grade you buy to show off. Every piece is a single, unbroken nugget of white meat, and using it well comes down to one instruction: keep it that way. This is crab to fold, never stir; crab to place on the plate, never scatter.
Cooking That Stays Out of the Way
Crab imperial, broiled just until the top colors, might be the ideal vehicle. A chilled lump with lemon and drawn butter is the laziest luxury on the Chesapeake. And in a crab cake, success is mostly about the order of operations: our recipe whisks butter, eggs, sour cream, parsley, lemon juice, Worcestershire and spices into a dressing first, then folds the crab and bread crumbs in at the very end, so the lumps ride through the mixing bowl intact.
A 4.94 Average Doesn't Happen by Accident
Across well over a hundred reviews, this meat sits within a whisker of a flawless score. Two themes come up constantly: packaging that keeps everything cold clear across the country, and finished crab cakes so good that buyers swear off every other source. It travels as a gift, too: one reviewer sent a box to Florida for a birthday and reported a very happy family on the other end.
Knowing When You Need It
Jumbo lump isn't the answer to every recipe. Where the crab melts into a soup or a dip, the richer and more economical Maryland claw crab meat does the job with flavor to spare. If the grade names still blur together, our guide to the different types of crab meat maps each cut to its best use. Whichever you land on, the meat ships frozen under dry ice, ready for the recipe you've been saving.

Frequently Asked Questions
What are the months for fresh crab meat?
We typically stock fresh jumbo lump, claw and backfin crab meat from April through November. From December to March we offer pasteurized crab meat.
How much crab meat is in one crab?
Yield varies with the crab's species, size, weight, season and how carefully it is picked. For a recipe that needs a precise amount, use the packaged weight on a crab-meat product rather than estimating yield per whole crab.
How do I prepare your crabs and seafood?
Every order ships with preparation instructions, and our food prep guide, recipes and how-to videos cover steaming, re-steaming and cooking all of our crabs and seafood.
How are the orders packed for shipment?
Every order is sealed inside an insulated styrofoam cooler and placed in a sturdy box for extra protection. Depending on the products, destination, transit time and season, we use ice packs and/or dry ice, and we pack orders to withstand potential shipping delays.
How much is shipping?
Shipping options and cost are calculated at checkout for the product, destination and requested delivery date. Eligible perishable orders may offer overnight or 2-day service, and select packages include standard shipping in the listed price.
