Two Claws, Two Jobs
American lobsters have two different large claws: a heavy crusher claw for shells and a finer-edged cutter claw for softer food.
The crusher claw is broad and powerful, while the cutter is narrower and sharper. American lobsters may have either claw on either side, so the crusher is not always the right or left claw.
Both claws are useful feeding tools, and the lobster can regenerate a lost claw over a series of molts, although the process takes time.
Preparation
Preparation
Lobster tails: boil
- Fill a large saucepan with water, add 1 teaspoon of salt and bring it to a boil.
- Add the lobster tails and boil for approximately 1 minute per oz of total tail weight.
Steam
- Add 1 cup of water and salt to a pan and bring it to a boil.
- Insert a wooden skewer lengthwise through each lobster tail to prevent curling.
- Place the tails on a steaming rack, cover and steam for approximately 7 to 8 minutes.
Grill
- Insert a wooden skewer through each tail, then boil the tails in salted water for 4 minutes.
- Drain and cool slightly. Place the tails on their backs and split the soft top shell lengthwise, leaving the hard underside intact.
- Add melted butter and lemon juice, then grill shell-side down over medium-high heat for approximately 7 to 8 minutes, until the meat is opaque and firm.
Bake
- Preheat the oven to 400°F.
- Split the soft shell lengthwise, place the tails on a baking tray and brush with melted butter.
- Bake for 8 to 10 minutes. Cooking time may vary with tail size.

8–10 oz Maine Lobster Tails Worth Sending Across the Country
Some gifts get opened; this one gets cooked. An 8–10 oz cold-water Maine tail is a genuinely generous single serving, big enough that the recipient sits down to a real lobster dinner rather than a taste, which is why so many boxes in this size ship to an address other than the buyer's own. A parent in another state, a friend who just moved, a couple marking something worth marking: lobster travels better than most people expect.
How It Survives the Trip
Each order goes out frozen in an insulated cooler beneath dry ice or gel packs, sealed against whatever the weather is doing in between. That means the tails can go straight into a freezer on arrival and wait for the right evening, with no pressure on anyone to cook the night the box lands on the porch.
Cooking a Tail This Size
Give a bigger tail a little more respect under the broiler. Cut the top of the thawed shell stem to stern, pull the halves apart to expose the meat, coat it with melted butter and seasoning, and broil until the surface browns and the center turns opaque, closer to ten minutes than five at this weight. The reward for those extra minutes is meat with real thickness to it, sweet through the middle and firm at the edges. Boiled in salted water instead, it stays plush enough for a proper lobster salad.
Bigger Tails, Broader Reading
Households that make lobster the whole meal can step up again to the 10–14 oz Maine lobster tails. And before the next occasion sneaks up on you, spend a few minutes in the crab and seafood section of our blog for serving ideas. Then think of someone far away who deserves a very good dinner, and put their address in the shipping field.
