Two Claws, Two Jobs
American lobsters have two different large claws: a heavy crusher claw for shells and a finer-edged cutter claw for softer food.
The crusher claw is broad and powerful, while the cutter is narrower and sharper. American lobsters may have either claw on either side, so the crusher is not always the right or left claw.
Both claws are useful feeding tools, and the lobster can regenerate a lost claw over a series of molts, although the process takes time.
Preparation
Preparation
Lobster tails: boil
- Fill a large saucepan with water, add 1 teaspoon of salt and bring it to a boil.
- Add the lobster tails and boil for approximately 1 minute per oz of total tail weight.
Steam
- Add 1 cup of water and salt to a pan and bring it to a boil.
- Insert a wooden skewer lengthwise through each lobster tail to prevent curling.
- Place the tails on a steaming rack, cover and steam for approximately 7 to 8 minutes.
Grill
- Insert a wooden skewer through each tail, then boil the tails in salted water for 4 minutes.
- Drain and cool slightly. Place the tails on their backs and split the soft top shell lengthwise, leaving the hard underside intact.
- Add melted butter and lemon juice, then grill shell-side down over medium-high heat for approximately 7 to 8 minutes, until the meat is opaque and firm.
Bake
- Preheat the oven to 400°F.
- Split the soft shell lengthwise, place the tails on a baking tray and brush with melted butter.
- Bake for 8 to 10 minutes. Cooking time may vary with tail size.

10–14 oz Maine Lobster Tails: Where Dinner Turns Into an Event
Somewhere above the 10 oz mark, a lobster tail stops being a portion and starts being an occasion. The 10–14 oz tail is the first of our two oversize grades, and it changes how you serve: one tail anchors a plate the way a ribeye does, and the cooked meat comes off the shell in medallions you can genuinely slice and share.
Butterfly It for the Full Effect
Big tails earn a little technique. After thawing, cut the top shell down its length, then lift the meat up through the split so it rests on top of the shell. Butterflied this way, the tail cooks evenly and looks the part coming out of the oven. Butter it well, season, and broil until the center turns opaque; a tail this size uses the far end of the five-to-ten-minute window, so give it time rather than more heat. The salted boiling-pot method works whenever the broiler is spoken for.
Choosing Between the Big Sizes
Within our cold-water Maine lineup, this grade is the pragmatic giant: dramatically bigger than the mid-range tails, yet easier to cook evenly and simpler to portion than the largest size we carry. If you want the absolute maximum, the 16–20 oz Maine lobster tails sit at the top of the range; if you are feeding one lobster lover extremely well, 10–14 oz is usually the smarter buy.
Planning Ahead
Tails arrive frozen, packed in an insulated cooler with dry ice or gel packs, so ordering before you need them costs nothing but freezer space. For sauce ideas, side pairings, and the rest of the shellfish canon, our crab and seafood articles make good pre-dinner reading. When the calendar shows an anniversary, a promotion, or a birthday ending in zero, this is the tail to thaw.
