Two Claws, Two Jobs
American lobsters have two different large claws: a heavy crusher claw for shells and a finer-edged cutter claw for softer food.
The crusher claw is broad and powerful, while the cutter is narrower and sharper. American lobsters may have either claw on either side, so the crusher is not always the right or left claw.
Both claws are useful feeding tools, and the lobster can regenerate a lost claw over a series of molts, although the process takes time.
Preparation
Preparation
Lobster tails: boil
- Fill a large saucepan with water, add 1 teaspoon of salt and bring it to a boil.
- Add the lobster tails and boil for approximately 1 minute per oz of total tail weight.
Steam
- Add 1 cup of water and salt to a pan and bring it to a boil.
- Insert a wooden skewer lengthwise through each lobster tail to prevent curling.
- Place the tails on a steaming rack, cover and steam for approximately 7 to 8 minutes.
Grill
- Insert a wooden skewer through each tail, then boil the tails in salted water for 4 minutes.
- Drain and cool slightly. Place the tails on their backs and split the soft top shell lengthwise, leaving the hard underside intact.
- Add melted butter and lemon juice, then grill shell-side down over medium-high heat for approximately 7 to 8 minutes, until the meat is opaque and firm.
Bake
- Preheat the oven to 400°F.
- Split the soft shell lengthwise, place the tails on a baking tray and brush with melted butter.
- Bake for 8 to 10 minutes. Cooking time may vary with tail size.

16–20 oz Maine Lobster Tails: 1 lb of Lobster on One Plate
This is the largest Maine tail we sell, and there is no dressing up what it is: a cold-water tail that can weigh over 1 lb, carrying enough sweet meat that two people can share one and both feel spoiled. Tails like this are usually a restaurant splurge on the back page of the menu. Here, you get to serve one at your own table.
Roasting a Giant
A tail this heavy asks for patience over intensity. Thaw it fully, split the top shell from end to end, and pull the meat into view before buttering and seasoning generously; there is a lot of lobster to cover. Under the broiler, keep the rack a notch lower than usual so the surface browns while the deep center cooks through, and check for opaque meat at the thickest point before calling it done. Carve it crosswise into medallions and even the skeptics at the table go quiet.
Six Reviews, Six Five-Stars
Every review of this size so far has landed at five stars. Buyers describe the meat as tender and sweet, mention boxes arriving on schedule and still solidly frozen in their dry-ice packaging, and, most tellingly, come back for a second round of the same tails. One reviewer who received an unexpected upgrade called it quite a surprise.
One Size Down
Prefer to split the drama across two plates instead of one? The 10–14 oz Maine lobster tails put a slightly smaller giant in front of each guest. Either way, the order reaches you frozen in an insulated cooler and will wait patiently in your freezer for a night that deserves it. Browse the crab and seafood stories on our blog for ideas on what to pour and serve alongside, though with a tail this size, the honest answer is: not much.
