Two Claws, Two Jobs
American lobsters have two different large claws: a heavy crusher claw for shells and a finer-edged cutter claw for softer food.
The crusher claw is broad and powerful, while the cutter is narrower and sharper. American lobsters may have either claw on either side, so the crusher is not always the right or left claw.
Both claws are useful feeding tools, and the lobster can regenerate a lost claw over a series of molts, although the process takes time.
Preparation
Preparation
Lobster tails: boil
- Fill a large saucepan with water, add 1 teaspoon of salt and bring it to a boil.
- Add the lobster tails and boil for approximately 1 minute per oz of total tail weight.
Steam
- Add 1 cup of water and salt to a pan and bring it to a boil.
- Insert a wooden skewer lengthwise through each lobster tail to prevent curling.
- Place the tails on a steaming rack, cover and steam for approximately 7 to 8 minutes.
Grill
- Insert a wooden skewer through each tail, then boil the tails in salted water for 4 minutes.
- Drain and cool slightly. Place the tails on their backs and split the soft top shell lengthwise, leaving the hard underside intact.
- Add melted butter and lemon juice, then grill shell-side down over medium-high heat for approximately 7 to 8 minutes, until the meat is opaque and firm.
Bake
- Preheat the oven to 400°F.
- Split the soft shell lengthwise, place the tails on a baking tray and brush with melted butter.
- Bake for 8 to 10 minutes. Cooking time may vary with tail size.

6–8 oz Maine Lobster Tails, the Grilling Sweet Spot
Ask a grill cook which lobster tail to buy and the answer usually lands in this range. At 6–8 oz, a cold-water Maine tail is thick enough to pick up real flame flavor without drying out, and small enough that the meat cooks through before the shell chars. It is the tail for people who think of lobster as food first and finery second.
Over the Coals or Under the Broiler
For the grill, cut the thawed shell down the top, open the meat, brush it generously with butter, and cook cut-side toward the heat until the flesh is opaque and lightly marked. Indoors, the broiler does the same work: buttered, seasoned tails on a sheet pan for five to ten minutes, done when the tops take on color. Salted boiling water remains the no-equipment route. However they cook, finish with more butter and a squeeze of lemon.
One tail in this range makes a satisfying main for most appetites, especially next to corn, slaw, or a baked potato, and two tails split among three lighter eaters leaves nobody wanting. The cooked meat also slices cleanly, which makes this size a favorite for lobster rolls built from real chunks rather than shreds.
From Our Freezer to Yours
These tails travel frozen in an insulated cooler packed with dry ice or gel packs, so summer heat between our door and yours is not a worry. Sizing up for bigger plates? The 8–10 oz Maine lobster tails are the next rung on the ladder. For grilling ideas and more shellfish know-how, our crab and seafood posts are worth a scroll before the coals go on.
