Two Claws, Two Jobs
American lobsters have two different large claws: a heavy crusher claw for shells and a finer-edged cutter claw for softer food.
The crusher claw is broad and powerful, while the cutter is narrower and sharper. American lobsters may have either claw on either side, so the crusher is not always the right or left claw.
Both claws are useful feeding tools, and the lobster can regenerate a lost claw over a series of molts, although the process takes time.
Preparation
Preparation
Lobster tails: boil
- Fill a large saucepan with water, add 1 teaspoon of salt and bring it to a boil.
- Add the lobster tails and boil for approximately 1 minute per oz of total tail weight.
Steam
- Add 1 cup of water and salt to a pan and bring it to a boil.
- Insert a wooden skewer lengthwise through each lobster tail to prevent curling.
- Place the tails on a steaming rack, cover and steam for approximately 7 to 8 minutes.
Grill
- Insert a wooden skewer through each tail, then boil the tails in salted water for 4 minutes.
- Drain and cool slightly. Place the tails on their backs and split the soft top shell lengthwise, leaving the hard underside intact.
- Add melted butter and lemon juice, then grill shell-side down over medium-high heat for approximately 7 to 8 minutes, until the meat is opaque and firm.
Bake
- Preheat the oven to 400°F.
- Split the soft shell lengthwise, place the tails on a baking tray and brush with melted butter.
- Bake for 8 to 10 minutes. Cooking time may vary with tail size.

4–5 oz Maine Lobster Tails: A Small Tail with Big Range
The smallest tail we carry is also the most flexible. At 4–5 oz, one cold-water Maine tail is a first course, two make a dinner, and a single tail split down the middle turns an ordinary steak into surf and turf without crowding the plate. Because the portion is modest, this is also the size we suggest to anyone cooking lobster at home for the first time: small tails are quick, forgiving, and hard to ruin.
Five Minutes Under the Broiler
Thaw, snip the top shell lengthwise, open it to expose the meat, brush with melted butter and seasoning, and broil until the flesh turns opaque with a touch of browning on top. With tails this size that happens fast, often at the early end of the five-to-ten-minute window, so stay close. A pot of salted boiling water gets them there too. Either way, finish with lemon wedges and a second pass of butter.
The Gift That Gets Reported Back
These tails hold a 4.92-star average across thirteen reviews, and a surprising number of them are about giving lobster rather than eating it: buyers sending tails to their parents, or serving a guest who then told everyone she knew. One reviewer is already planning to reorder for upcoming birthdays, which small, easily portioned tails happen to suit very well.
Where to Go From Here
Orders ship frozen with dry ice or gel packs in an insulated cooler, so the tails can cook the day they arrive or weeks later from your freezer. When one small tail per plate stops being enough, the 10–14 oz Maine lobster tails make the leap to a dinner-sized centerpiece.
