Why the Pieces Are So Large
Jumbo lump crab meat comes from the two large muscles that power a crab’s swimming fins. Because each crab has only two of these muscles, jumbo lump is especially prized.
Careful picking keeps these swimmer-fin muscles intact, producing the impressive whole pieces associated with jumbo lump. Their mild, sweet flavor makes them a centerpiece in premium Maryland crab cakes.
Preparation
Preparation
Jumbo lump crab cakes: broil
- Thaw the crab cakes and place them on a broiler pan or baking sheet.
- Broil for approximately 12 to 14 minutes, until golden brown and crisp on top.
Bake
- Preheat the oven to 350°F and place the thawed crab cakes on a baking sheet.
- Top each crab cake with a pad of butter or drizzle with melted butter.
- Bake for approximately 7 to 8 minutes, then broil for 3 to 4 minutes until golden brown.
Sauté
- Heat oil in a large skillet over high heat until hot but not smoking.
- Add the thawed crab cakes and sauté for approximately 3 to 4 minutes per side, until golden brown.
- Transfer to paper towels to absorb excess oil.
Lobster tails: boil
- Fill a large saucepan with water, add 1 teaspoon of salt and bring it to a boil.
- Add the lobster tails and boil for approximately 1 minute per oz of total tail weight.
Steam
- Add 1 cup of water and salt to a pan and bring it to a boil.
- Insert a wooden skewer lengthwise through each lobster tail to prevent curling.
- Place the tails on a steaming rack, cover and steam for approximately 7 to 8 minutes.
Grill
- Insert a wooden skewer through each tail, then boil the tails in salted water for 4 minutes.
- Drain and cool slightly. Place the tails on their backs and split the soft top shell lengthwise, leaving the hard underside intact.
- Add melted butter and lemon juice, then grill shell-side down over medium-high heat for approximately 7 to 8 minutes, until the meat is opaque and firm.
Bake
- Preheat the oven to 400°F.
- Split the soft shell lengthwise, place the tails on a baking tray and brush with melted butter.
- Bake for 8 to 10 minutes. Cooking time may vary with tail size.

Surf & Surf: Two Maine Tails, Two Crab Cakes, No Steak Required
Some dinners do not need anything from land. This one pairs two 5–6 oz Maine lobster tails with two of our 5¼ oz jumbo lump crab cakes: cold-water sweetness from the North Atlantic meeting Chesapeake lump on the same plate, portioned for two people who agree that shellfish is the point. The tail brings snap and brine; the cake brings tender lump barely held together, the same ocean speaking in two accents.
Two Shellfish, One Oven Window
The timing works in your favor. Butterfly the tails and slide them under the broiler; while the shells redden and the meat turns opaque, the crab cakes take their few minutes per side in a hot, oiled skillet until each face is golden. Drain the cakes briefly, pull the tails, and both land on the table together with melted butter and a lemon wedge each. Warm the plates before serving; shellfish cools faster than steak ever does, and this dinner has no steak to hide behind.
Keeping the Supporting Cast Small
With two rich shellfish sharing the plate, the sides should stay light and bright. Our list of five dishes to serve with crab cakes works just as well beside a lobster tail; pick one or two and stop there.
A Planned Dinner, Not an Improvised One
Everything ships frozen in an insulated cooler with dry ice, which is exactly what you want for a dinner you are planning rather than improvising. Move the box to the freezer on arrival, thaw in the refrigerator the night before, and the anniversary (or the Tuesday that deserves better than it was going to get) is already handled.
