Grading and Sizing Maryland Blue Crabs
There is no universal industry standard for crab sizes. A crab sold as large by one supplier may be considered medium somewhere else. Harbour House Crabs sizes hard-shell crabs by measuring the top shell from point to point, giving customers a clear physical measurement instead of relying on a grade name alone.
Male Jimmy Size Guide
- Heavyweights: 7+ in
- Jumbos: 6½–7 in
- Large: 6–6½ in
- Medium: 5½–6 in
- #2 males: 5–5½ in
Point-to-point measurements make it easier to compare grades and understand exactly what should arrive in the box.
Preparation
Preparation
Maryland blue crabs: steaming or re-steaming
- Add approximately 2 in of water to a large pot and place a rack or steaming basket inside to keep the crabs out of the water.
- Bring the water to a boil and wait until steam is visible before adding the crabs.
- Sprinkle the crabs with crab seasoning to taste, then cover the pot with a lid.
- For live crabs, steam for 5 to 10 minutes after steam begins escaping from under the lid. The crabs are cooked when they turn orange.
- For already-steamed crabs, follow the same method for less time and use the steam-time chart below for the quantity being reheated.
HHC Crab Seasoning ingredients: salt, spices and paprika.

The Premium Deluxe Feast: a Dozen 5½–6½ Inch Blues, Fully Equipped
Some crab orders assume you already own the gear. This one does not. Alongside a dozen steamed blue crabs sized 5½–6½ in point to point, the box carries two engraved crab mallets, a roll of crab paper and an iLoveCrabs pint glass, which means the only things you supply are a table, a stack of napkins and the people.
Two Mallets, Two Pickers, No Waiting
A dozen crabs at this size makes a leisurely dinner for two or a generous opening course for three. Roll the paper out, pour the crabs in a pile down the middle, and let the pair of mallets keep both pickers working so nobody sits idle while a claw gets cracked. The pint glass settles the question of whose drink is whose.
Hot From the Pot, or Five Minutes From It
Your crabs are steamed the day they leave us and ride in an insulated cooler with gel packs or dry ice; on two-day routes they may arrive partially or even fully frozen. That is normal and easy to fix: set a rack over about 2 in of boiling water, let the crabs steam until hot through, and they return to the table as if they had just left our steamer, seasoning intact.
When the Picking Is Done
If discipline holds and any picked meat survives the night, it has a future, folded into eggs the next morning or warmed in butter over toast. Browse our recipe collection for ideas worth saving a claw for. Order the Premium Deluxe when you want the entire ritual, gear and all, to show up in a single box.

Frequently Asked Questions
How do you eat Maryland Blue Crabs?
Ask a Marylander how to eat crabs and you are sure to get a variety of answers. Step-by-step instructions are included with every crab order, and our how-to guide and videos walk you through cracking and picking like a pro.
How many crabs should I order for my crab feast?
Depending on appetite and what else is being served, plan for 6–8 crabs per person on average, and more for heavy eaters.
Are your hardshell blue crabs frozen?
Our hard-shell crabs are steamed to order on the day they ship and packed cold for delivery. Dry ice used on some routes can partially or fully freeze crabs in transit without changing the product that was prepared.
How long will my steamed blue crabs stay fresh?
Keep them refrigerated and enjoy your crabs within 2 to 3 days.
Do you send crab paper with the orders?
Unless specified in the product description, crab paper and mallets are not included and can be purchased separately along with our other popular accessories.
