Why the Pieces Are So Large
Jumbo lump crab meat comes from the two large muscles that power a crab’s swimming fins. Because each crab has only two of these muscles, jumbo lump is especially prized.
Careful picking keeps these swimmer-fin muscles intact, producing the impressive whole pieces associated with jumbo lump. Their mild, sweet flavor makes them a centerpiece in premium Maryland crab cakes.
Preparation
Preparation
Jumbo lump crab cakes: broil
- Thaw the crab cakes and place them on a broiler pan or baking sheet.
- Broil for approximately 12 to 14 minutes, until golden brown and crisp on top.
Bake
- Preheat the oven to 350°F and place the thawed crab cakes on a baking sheet.
- Top each crab cake with a pad of butter or drizzle with melted butter.
- Bake for approximately 7 to 8 minutes, then broil for 3 to 4 minutes until golden brown.
Sauté
- Heat oil in a large skillet over high heat until hot but not smoking.
- Add the thawed crab cakes and sauté for approximately 3 to 4 minutes per side, until golden brown.

Eight of the Crab Cakes That Built Our Name
The 5+ oz Harbour House crab cake has one recipe and it has not moved in years: our best jumbo lump, hand-shaped, with only as much crumb as physics requires. This package brings eight of them, each sealed on its own, with an iLoveCrabs pint glass tucked into the box as the house souvenir.
Why the lumps stay whole
Hand-forming matters with jumbo lump. Worked too hard, the big swimming-fin pieces break down into paste; shaped gently, they interlock, which is why you can see whole lumps in the cross-section of a finished cake and why it holds together with so little binder. Cut one open at the table and the difference explains itself faster than we can.
From freezer to golden in minutes
Because every cake travels in its own seal, eight is really eight separate decisions: two tonight, four for Saturday's guests, the rest waiting their turn. A hot skillet with oil takes a thawed cake to deep gold in three to four minutes per side; drain briefly, squeeze a lemon over it, done. In our kitchen the classic finish is tartar sauce brightened with tarragon and a wedge on the side.
Rounding out the plate
A cake this rich wants simple company, and we keep a shortlist of favorites in our guide to what to serve with crab cakes: bright slaws, roasted vegetables, nothing that competes with the crab. The eight-pack ships frozen in an insulated cooler with dry ice, so the whole batch lands kitchen-ready. If you have been meaning to find out what a true Maryland crab cake tastes like, this is the box that settles it.
