Two Claws, Two Jobs
American lobsters have two different large claws: a heavy crusher claw for shells and a finer-edged cutter claw for softer food.
The crusher claw is broad and powerful, while the cutter is narrower and sharper. American lobsters may have either claw on either side, so the crusher is not always the right or left claw.
Both claws are useful feeding tools, and the lobster can regenerate a lost claw over a series of molts, although the process takes time.
Preparation
Preparation
Maryland blue crabs: steaming or re-steaming
- Add approximately 2 in of water to a large pot and place a rack or steaming basket inside to keep the crabs out of the water.
- Bring the water to a boil and wait until steam is visible before adding the crabs.
- Sprinkle the crabs with crab seasoning to taste, then cover the pot with a lid.
- For live crabs, steam for 5 to 10 minutes after steam begins escaping from under the lid. The crabs are cooked when they turn orange.
- For already-steamed crabs, follow the same method for less time and use the steam-time chart below for the quantity being reheated.
HHC Crab Seasoning ingredients: salt, spices and paprika.
Raw shrimp: steaming
- Add 2 in of water to the bottom of a pot and bring it to a boil.
- Place a steaming basket in the pot and add the raw shrimp, keeping them out of the water.
- Sprinkle with Harbour House Crabs seafood seasoning and cover with a lid.
- Steam for approximately 4 to 5 minutes after steam begins escaping from under the lid. The shrimp are done when they turn from grey to pink.
- Serve with cocktail sauce. Steam times may vary.
Lobster tails: boil
- Fill a large saucepan with water, add 1 teaspoon of salt and bring it to a boil.
- Add the lobster tails and boil for approximately 1 minute per oz of total tail weight.
Steam
- Add 1 cup of water and salt to a pan and bring it to a boil.
- Insert a wooden skewer lengthwise through each lobster tail to prevent curling.
- Place the tails on a steaming rack, cover and steam for approximately 7 to 8 minutes.
Grill
- Insert a wooden skewer through each tail, then boil the tails in salted water for 4 minutes.
- Drain and cool slightly. Place the tails on their backs and split the soft top shell lengthwise, leaving the hard underside intact.
- Add melted butter and lemon juice, then grill shell-side down over medium-high heat for approximately 7 to 8 minutes, until the meat is opaque and firm.
Bake
- Preheat the oven to 400°F.
- Split the soft shell lengthwise, place the tails on a baking tray and brush with melted butter.
- Bake for 8 to 10 minutes. Cooking time may vary with tail size.

Blue Crab, Lobster Tails and Gulf Shrimp on One Table
This combo skips the steak and doubles down on the water: a half dozen hardshell blue crabs at 5½ in and up, two 4–5 oz Maine lobster tails, and ½ lb of raw jumbo Gulf shrimp, with four espresso bean brownies to bring the meal back to land at the end. Three kinds of shellfish, three distinct characters: the whole argument for seafood, made in a single order.
Three sweetnesses, side by side
Tasting them together is the fun of it. Blue crab is delicate and briny, the reward at the end of a little work with your hands. Lobster tail is dense and rich, best split and broiled with butter finding every seam. The shrimp bring the snap, and because they come raw, you decide whether they show up steamed under seasoning, grilled, or seared as the opening bite while the tails broil.
Making a night of it
For two people this is an unhurried tasting menu; for four it is a lively appetizer-through-dessert spread with the crabs at center. Give the hard shells their own stretch of table and let the lobster and shrimp come out in waves. When the last claw is cracked, the brownies close the evening without asking anyone to cook again.
For the crab-forward version
If the crabs steal the show, as they usually do, the thirty-crab Maryland blue crab feast makes them the entire show, and our piece on building a memorable crab feast explains the rest. The crabs here are steamed fresh to order, and the whole combo travels cold in one insulated cooler to your door.
