Why the Pieces Are So Large
Jumbo lump crab meat comes from the two large muscles that power a crab’s swimming fins. Because each crab has only two of these muscles, jumbo lump is especially prized.
Careful picking keeps these swimmer-fin muscles intact, producing the impressive whole pieces associated with jumbo lump. Their mild, sweet flavor makes them a centerpiece in premium Maryland crab cakes.
Preparation
Preparation
Jumbo lump crab cakes: broil
- Thaw the crab cakes and place them on a broiler pan or baking sheet.
- Broil for approximately 12 to 14 minutes, until golden brown and crisp on top.
Bake
- Preheat the oven to 350°F and place the thawed crab cakes on a baking sheet.
- Top each crab cake with a pad of butter or drizzle with melted butter.
- Bake for approximately 7 to 8 minutes, then broil for 3 to 4 minutes until golden brown.
Sauté
- Heat oil in a large skillet over high heat until hot but not smoking.
- Add the thawed crab cakes and sauté for approximately 3 to 4 minutes per side, until golden brown.
- Transfer to paper towels to absorb excess oil.

Whole Blue Crabs and Jumbo Lump Cakes: Crab Both Ways
There are two schools of crab eating in Maryland: the pickers, who want a dozen steamed hard shells and a quiet hour, and the fork crowd, who want the meat already gathered into a proper crab cake. This feast refuses to choose. A dozen blue crabs in the 5½ to 6½ inch range shares the cooler with two of our famous 5¼ oz jumbo lump crab cakes, plus the HHC crab paper and engraved mallets that outfit the table.
Same crab, two textures
Eating both in one meal makes a point of the contrast. Meat picked warm from the shell is delicate and faintly briny, the seasoning still on your fingers; the crab cake concentrates that same jumbo lump into a crusted, golden bite. Serve the crabs as the long first act out on the paper, then bring the cakes forward as the finale once the mallets go quiet. Anyone at the table still undecided between the two schools gets to run the comparison in real time.
What regulars say
Reviews of this combo, which holds a 4.8-star average, keep circling the same notes: meaty crabs, careful packing, and how often the order turns into a gift; more than one customer tells us they sent it to a crab-loving friend who immediately asked where it came from.
Scaling the idea up
For a bigger picking crowd, the 30-count steamed blue crab feast multiplies the hard-shell side of this equation, and our advice on creating a memorable crab feast helps you set the table at either scale. This combo ships frozen in an insulated cooler with dry ice, so pick your evening and let it thaw into dinner.
