Two Claws, Two Jobs
American lobsters have two different large claws: a heavy crusher claw for shells and a finer-edged cutter claw for softer food.
The crusher claw is broad and powerful, while the cutter is narrower and sharper. American lobsters may have either claw on either side, so the crusher is not always the right or left claw.
Both claws are useful feeding tools, and the lobster can regenerate a lost claw over a series of molts, although the process takes time.
Preparation
Preparation
Lobster tails: boil
- Fill a large saucepan with water, add 1 teaspoon of salt and bring it to a boil.
- Add the lobster tails and boil for approximately 1 minute per oz of total tail weight.
Steam
- Add 1 cup of water and salt to a pan and bring it to a boil.
- Insert a wooden skewer lengthwise through each lobster tail to prevent curling.
- Place the tails on a steaming rack, cover and steam for approximately 7 to 8 minutes.
Grill
- Insert a wooden skewer through each tail, then boil the tails in salted water for 4 minutes.
- Drain and cool slightly. Place the tails on their backs and split the soft top shell lengthwise, leaving the hard underside intact.
- Add melted butter and lemon juice, then grill shell-side down over medium-high heat for approximately 7 to 8 minutes, until the meat is opaque and firm.
Bake
- Preheat the oven to 400°F.
- Split the soft shell lengthwise, place the tails on a baking tray and brush with melted butter.
- Bake for 8 to 10 minutes. Cooking time may vary with tail size.

Eight Maine Lobster Tails in One Groupon Pack
Most lobster purchases are counted in twos. This one arrives eight at a time: a full pack of 5–6 oz cold-water Maine tails reserved for our Groupon customers, enough to put a whole tail in front of everyone at a dinner party or to stage several lobster nights out of a single box. If you found us through a Groupon voucher, this is the listing it redeems.
Cooking Eight Tails at Once
Batch-broiling is easier than it sounds. Thaw the tails, split each top shell lengthwise, and pull the halves apart to expose the meat. Arrange all eight on one sheet pan, brush with melted butter, season, and broil together until the tops brown lightly and the meat turns opaque. Tails this size finish in five to ten minutes, and one pan means one timer. For a stovetop crowd, a big pot of salted boiling water handles them in rounds. Serve with lemon wedges and more butter than seems reasonable.
Or Spread Them Across the Month
Nothing says all eight must be cooked the same night. The pack ships frozen in an insulated cooler under dry ice or gel packs, so the tails can go straight into your freezer and come out two at a time, a standing reserve for date nights, lobster rolls, or bulking up a seafood pasta. Cold-water Maine meat holds its sweetness through the freezer beautifully, which is the whole reason we ship it this way.
Making the Most of the Box
Eight tails invite a little experimenting: broil half of them plain, throw a couple on the grill, and save the rest for lobster salad or a decadent mac and cheese. For techniques and recipe starting points, the crab and seafood section of our blog covers far more than lobster. However you pace yourself through the pack, you will run out of tails before you run out of good uses for them.
