Why the Pieces Are So Large
Jumbo lump crab meat comes from the two large muscles that power a crab’s swimming fins. Because each crab has only two of these muscles, jumbo lump is especially prized.
Careful picking keeps these swimmer-fin muscles intact, producing the impressive whole pieces associated with jumbo lump. Their mild, sweet flavor makes them a centerpiece in premium Maryland crab cakes.
Preparation
Preparation
Jumbo lump crab cakes: broil
- Thaw the crab cakes and place them on a broiler pan or baking sheet.
- Broil for approximately 12 to 14 minutes, until golden brown and crisp on top.
Bake
- Preheat the oven to 350°F and place the thawed crab cakes on a baking sheet.
- Top each crab cake with a pad of butter or drizzle with melted butter.
- Bake for approximately 7 to 8 minutes, then broil for 3 to 4 minutes until golden brown.
Sauté
- Heat oil in a large skillet over high heat until hot but not smoking.
- Add the thawed crab cakes and sauté for approximately 3 to 4 minutes per side, until golden brown.
- Transfer to paper towels to absorb excess oil.
Raw shrimp: steaming
- Add 2 in of water to the bottom of a pot and bring it to a boil.
- Place a steaming basket in the pot and add the raw shrimp, keeping them out of the water.
- Sprinkle with Harbour House Crabs seafood seasoning and cover with a lid.
- Steam for approximately 4 to 5 minutes after steam begins escaping from under the lid. The shrimp are done when they turn from grey to pink.
- Serve with cocktail sauce. Steam times may vary.
Lobster tails: boil
- Fill a large saucepan with water, add 1 teaspoon of salt and bring it to a boil.
- Add the lobster tails and boil for approximately 1 minute per oz of total tail weight.
Steam
- Add 1 cup of water and salt to a pan and bring it to a boil.
- Insert a wooden skewer lengthwise through each lobster tail to prevent curling.
- Place the tails on a steaming rack, cover and steam for approximately 7 to 8 minutes.
Grill
- Insert a wooden skewer through each tail, then boil the tails in salted water for 4 minutes.
- Drain and cool slightly. Place the tails on their backs and split the soft top shell lengthwise, leaving the hard underside intact.
- Add melted butter and lemon juice, then grill shell-side down over medium-high heat for approximately 7 to 8 minutes, until the meat is opaque and firm.
Bake
- Preheat the oven to 400°F.
- Split the soft shell lengthwise, place the tails on a baking tray and brush with melted butter.
- Bake for 8 to 10 minutes. Cooking time may vary with tail size.

Lobster Tail, Crab Cake and Shrimp: One Box, One Great Plate
Some seafood dinners are about quantity. This one is about range: a 6–8 oz Maine lobster tail, one of our 5+ oz jumbo lump crab cakes, and ½ lb of raw jumbo Gulf shrimp, with a shaker of HHC Seafood Seasoning and an iLoveCrabs pint glass rounding out the box. It is the order for one person who wants the full spread, or two people happy to divide three very different kinds of sweet between them.
Three cooks, one stove
Each piece takes its own short path to the plate. The tail splits and broils in under ten minutes, the meat brushed with butter along the way. The crab cake, hand-formed from jumbo lump with barely enough binder to hold it, sears in a skillet until the crust turns bronze. The shrimp, arriving raw, are the flexible player: a quick steam under a dusting of the seasoning, or a hard sear in the crab cake's pan while it rests. Everything can land on the table inside half an hour.
Building the plate around it
With three rich mains sharing one plate, the sides should stay light: lemon, a green salad, maybe a warm roll. For more considered pairings, our rundown of five dishes to serve with crab cakes applies to the whole plate, not just the cake. Pour something cold into the pint glass and declare the kitchen closed.
The pack ships cold in an insulated cooler with gel packs or dry ice. For anniversaries, promotions, or a Tuesday that needs rescuing, this is a lot of celebration in one compact box.

Every order ships with preparation instructions, and our food prep guide, recipes and how-to videos cover steaming, re-steaming and cooking all of our crabs and seafood.
