Why the Pieces Are So Large
Jumbo lump crab meat comes from the two large muscles that power a crab’s swimming fins. Because each crab has only two of these muscles, jumbo lump is especially prized.
Careful picking keeps these swimmer-fin muscles intact, producing the impressive whole pieces associated with jumbo lump. Their mild, sweet flavor makes them a centerpiece in premium Maryland crab cakes.

Jumbo lump crab cakes: broil
- Thaw the crab cakes and place them on a broiler pan or baking sheet.
- Broil for approximately 12 to 14 minutes, until golden brown and crisp on top.
Bake
- Preheat the oven to 350°F and place the thawed crab cakes on a baking sheet.
- Top each crab cake with a pad of butter or drizzle with melted butter.
- Bake for approximately 7 to 8 minutes, then broil for 3 to 4 minutes until golden brown.
Sauté
- Heat oil in a large skillet over high heat until hot but not smoking.
- Add the thawed crab cakes and sauté for approximately 3 to 4 minutes per side, until golden brown.
- Transfer to paper towels to absorb excess oil.
Raw shrimp: steaming
- Add 2 in of water to the bottom of a pot and bring it to a boil.
- Place a steaming basket in the pot and add the raw shrimp, keeping them out of the water.
- Sprinkle with Harbour House Crabs seafood seasoning and cover with a lid.
- Steam for approximately 4 to 5 minutes after steam begins escaping from under the lid. The shrimp are done when they turn from grey to pink.
- Serve with cocktail sauce. Steam times may vary.

The Dinner Combo, Upgraded to Jumbo Hard Shells
This is our popular crab dinner built on our biggest table crabs: a dozen steamed hard shells measuring 6¼–7 in across the shell. Where the standard dinner runs on mid-size crabs, these jumbos give up their meat in heavier pieces and take longer to finish, which, at a crab table, is exactly the point. Even the claws carry enough meat to be worth working for, something smaller crabs cannot promise. The crab cakes, shrimp and brownies round the evening into a full meal rather than just a picking session.
How the evening usually runs
Most folks spread the paper, set out the two mallets and start on the crabs while the Harbour House crab cakes heat. The ½ lb of jumbo shrimp arrives already steamed, so it can go straight to the table as the warm-up course, chilled with cocktail sauce or gently rewarmed. By the time the cakes come out golden, hands are ready for a break from picking anyway. The four espresso bean brownies wait until the paper gets rolled up.

Do you send crab paper with the orders?
Unless specified in the product description, crab paper and mallets are not included and can be purchased separately along with our other popular accessories.
