Grading and Sizing Maryland Blue Crabs
There is no universal industry standard for crab sizes. A crab sold as large by one supplier may be considered medium somewhere else. Harbour House Crabs sizes hard-shell crabs by measuring the top shell from point to point, giving customers a clear physical measurement instead of relying on a grade name alone.
Male Jimmy Size Guide
- Heavyweights: 7+ in
- Jumbos: 6½–7 in
- Large: 6–6½ in
- Medium: 5½–6 in
- #2 males: 5–5½ in
Point-to-point measurements make it easier to compare grades and understand exactly what should arrive in the box.
Preparation
Preparation
Maryland blue crabs: steaming or re-steaming
- Add approximately 2 in of water to a large pot and place a rack or steaming basket inside to keep the crabs out of the water.
- Bring the water to a boil and wait until steam is visible before adding the crabs.
- Sprinkle the crabs with crab seasoning to taste, then cover the pot with a lid.
- For live crabs, steam for 5 to 10 minutes after steam begins escaping from under the lid. The crabs are cooked when they turn orange.
- For already-steamed crabs, follow the same method for less time and use the steam-time chart below for the quantity being reheated.
HHC Crab Seasoning ingredients: salt, spices and paprika.

A Dozen Jumbo Blue Crabs With the Table Already Sorted
At 6¼–7 in point to point, the crabs in this feast sit near the top of our hard-shell lineup. Crabs that size have been eating well all season, and it shows when you crack one open: the back fin comes out in thick pieces, the claws take a real swing to open, and a single crab keeps a picker busy for a good while. Every dozen is steamed to order the way Maryland houses have done it for generations, so they come out of the cooler seasoned and ready to eat.
Bigger crabs, easier picking
If you have ever worked through a pile of small crabs for slim reward, a jumbo changes the arithmetic. There is simply more meat behind every crack of the shell, which makes this the dozen we point first-timers toward: less technique required, more payoff per crab. Twelve at this size make a serious sitting for two hungry pickers or a relaxed one for three or four with sides on the table.
Paper down, mallets out, glass raised
The deluxe part is the setup. Roll the crab paper down the table and cleanup at the end is one fold-and-toss. The two engraved mallets handle the claws: a couple of light taps, not a demolition. And the iLoveCrabs pint glass goes to whoever earned it, filled with something cold while the picking gets underway.
If a few crabs survive the night
Leftover steamed crabs hold up well: a few minutes over 2 in of steaming water brings them back to temperature without drying the meat out. Picked leftovers are the start of something too; our recipe collection has plenty of uses for a bowl of hand-picked crab. Order the Jumbo Deluxe when you want the big-crab experience without hunting down a single piece of gear on your own.

Frequently Asked Questions
How do you eat Maryland Blue Crabs?
Ask a Marylander how to eat crabs and you are sure to get a variety of answers. Step-by-step instructions are included with every crab order, and our how-to guide and videos walk you through cracking and picking like a pro.
How are blue crabs measured?
Maryland blue crabs are measured point to point across the shell. Our sizes range from #2 males at 5–5½ in up to 7+ in heavyweights.
Are your hardshell blue crabs frozen?

How long will my steamed blue crabs stay fresh?
Keep them refrigerated and enjoy your crabs within 2 to 3 days.
Do you send crab paper with the orders?
Unless specified in the product description, crab paper and mallets are not included and can be purchased separately along with our other popular accessories.
