Maryland Soft Shell Crabs - Hotel (4–4½ in)
- Cleaned & ready to cook
- Tender, fully edible shell
- Premium value
4–4½ in. One of America's favorite seafood delicacies, our hotel-size soft shell crabs are caught just after shedding their hard outer shell (called molting) and carefully selected for superior quality and size. Because the new shell has not hardened, the whole crab can be enjoyed: fry it, grill it or saute it. They come cleaned and frozen, ready to prepare to your liking.

A Very Short Window
Hard-shell and soft-shell blue crabs are the same species. A soft shell is the brief stage immediately after a crab molts and before its new shell hardens.
The shell begins hardening again within hours, which makes fresh soft shells seasonal and highly prized. During this stage the entire cleaned crab can be cooked and eaten, shell included.
Preparation
Preparation
Soft shell crabs
- Heat oil in a large skillet.
- Combine salt and flour in one bowl, and beat 2 eggs in another.
- Dip each cleaned soft shell crab in the egg, then coat it with the flour mixture or soft shell batter.
- Cook for approximately 4 minutes per side, until the shell is red and crisp and the batter is golden brown.
- Transfer to a paper-towel-lined plate to absorb excess oil.
- Serve as a sandwich or as a main course.

Hotel Soft Shells: The Crab Built for a Bun
Every soft shell grade has a job, and the hotel's job is the sandwich. At 4–4½ in, this crab is sized almost exactly to a kaiser roll: fried crisp, tucked under lettuce and tomato, claws poking out both sides the way the classic photo demands. If you have seen a soft crab sandwich on a Chesapeake menu, odds are it was a hotel.
The Whole Crab, No Mallet Required
These are blue crabs caught in the brief hours after molting, before the new shell hardens, then cleaned so every bit is edible. What you get is crab flavor without the labor: a shatter-crisp exterior giving way to sweet, tender meat, eaten with a fork or with both hands on bread. For anyone who loves crab but not the picking, this is the answer.
Four Minutes a Side
Cooking could hardly be simpler. Heat oil in a skillet, run each crab through beaten egg, then through salted flour or your favorite batter, and lay it in. Around four minutes per side, the shell blushes red and the coating turns golden; drain on paper towels and build the sandwich while it is still hissing.
Frozen at the Right Moment
Because the soft stage lasts only hours, our hotels are cleaned and frozen at their peak, then shipped in an insulated cooler under dry ice and gel packs. Plan a thaw before the skillet and they cook up like they just left the water.
If you are weighing this against a tray of hard crabs, our explainer on the differences between hard shell and soft shell crabs settles the question. For sandwich night, though, the hotel was made for the job.

Frequently Asked Questions
What is the difference between hardshell and softshell crabs?
They are the same blue crab species in different lifecycle stages. Right after molting, the crab's body is temporarily soft, a short window when the whole crab is tender enough to enjoy. Hardshell crabs are typically steamed, while soft shell crabs are battered and fried.
How do I prepare your crabs and seafood?
Every order ships with preparation instructions, and our food prep guide, recipes and how-to videos cover steaming, re-steaming and cooking all of our crabs and seafood.
When is Maryland blue crab season?
Maryland crab season typically runs from April 1 into late November and early December. Outside that timeframe, or when Chesapeake crabs are not yet available, we source blue crabs from the Carolinas or Louisiana.
How are the orders packed for shipment?
Every order is sealed inside an insulated styrofoam cooler and placed in a sturdy box for extra protection. Depending on the products, destination, transit time and season, we use ice packs and/or dry ice, and we pack orders to withstand potential shipping delays.
How are blue crabs measured?
Maryland blue crabs are measured point to point across the shell. Our sizes range from #2 males at 5–5½ in up to 7+ in heavyweights.
