Natural Coastal Engineers
Oysters are filter feeders that remove algae and excess nutrients as they eat. Under favorable conditions, one adult oyster can filter up to 50 gal of water in a day.
Oyster reefs also create shelter and feeding habitat for fish and other animals. Their filtering activity can improve water clarity and help submerged aquatic plants receive more sunlight.

Shucked Maryland Oysters for the Frying Pan
Somebody already did the hard part. These local Maryland oysters arrive out of the shell, meaty and firm with their full flavor intact, so the distance between the cooler and a skillet of frying oysters is measured in minutes, not knife work. That convenience matters most on big cooking days (a fry-up for guests, a holiday stew) when opening a few dozen by hand would eat the whole afternoon.
The Golden Standard
For classic fried oysters, drain the meats well and get oil hot in a deep fryer or heavy pan. Run each oyster through an egg bath, coat it in flour or an oyster batter, and fry to a deep golden brown. Eat them immediately, with cocktail or tartar sauce on the side, because fried oysters wait for no one.
Every Other Pot They Belong In
Shucked meats are also the form serious cooks want for oyster stew, where they poach gently in hot milk and butter, and for the oyster dressing that shows up beside the turkey on Chesapeake holiday tables. Anywhere a recipe calls for oysters by the cupful rather than the piece, this is the product it means. A quick drain and a glance through the meats for any stray bit of shell is the only prep they ask of you.
For the Traditionalists
If half the pleasure for you is the shell itself, our local Maryland oysters in the shell keep the ritual alive, and our guide to shucking oysters safely makes sure the ritual doesn't cost you a thumb. Shucked oysters ship perishable, packed cold with gel packs in an insulated cooler. Keep them refrigerated and cook them soon after arrival.

Every order ships with preparation instructions, and our food prep guide, recipes and how-to videos cover steaming, re-steaming and cooking all of our crabs and seafood.
How are the orders packed for shipment?
