Heat a pot with about 1 inch of water on the bottom. Place a rack in the pot to keep crabs out of water. Wait until steam is apparent. Place the crabs on the rack or in a perforated basket, sprinkle with seasoning and cover. Let the crabs continue to steam about 5 to 10 minutes after steam starts pushing out from under the lid. The steam time may fluctuate according to the size and quantity of crabs. Make sure that there is always water in the pot to prevent scorching of the pot.
How will I know when the crabs are done? The crab should be completely orange in color.
How can I tell if the crab is still alive? Easy. Hold the crab upside down and smack it lightly on a table. If you see any movement, the crab is still alive and okay to steam.
